Persian or English cucumbers

¼ cup Olokoi

¼ cup rice wine vinegar

2 table spoons sesame oil

2 teaspoons mirin

Shichimi Togarashi

Black sesame seeds
Directions
Peel and slice the cucumbers. Combine all ingredients, but the Shichimi Togarashi and black sesame seeds. When all combined, allow the cucumbers to marinate for 30 minutes to up to an hour. Top with the Shichimi Togarashi and black sesame seeds.
