Olokoi Chimichurri-Style

This is our Olokoi take on a classic chimichurri, created by my good friend and BBQ master Uncle Chico. This herby, garlicky, and full of flavor, but with a bold citrus-soy kick. Instead of lemon juice, we use Olokoi to bring brightness, depth, and a touch of heat. Perfect as a marinade, topping, or dip for grilled meats, veggies, and more.

Ingredients

  • 3 or 4 pieces of jarred roasted red bell pepper in oil, finely chopped
  • 1/2 cup Fresh cilantro and flat-leaf parsley, finely chopped
  • 3 cloves of garlic, finely chopped
  • Kosher salt, black pepper, for seasoning
  • A pinch or two of chili flakes
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Olokoi for acidity
  • 3/4 cup Olive oil to bring it all together

Directions

Combine all ingredients until well combined. Adjust seasonings as needed and enjoy!
