Olokoi marinated tomatoes

I marinated these tomatoes to have with a bagel and this was an absolutely perfect combination.

Ingredients

  • 1/4 cup Hot Olokoi
  • 1/3 cup olive oil
  • A pinch of chili flake
  • A pinch of dry basil
  • A pinch of salt and pepper
  • A squeeze of honey
  • 1 small crushed garlic clove

Directions

Add all the vinaigrette ingredients to a jar, seal it, and give it a good shake until everything’s well combined. Taste and adjust the seasonings if needed. Pour the dressing over your tomatoes and let them chill in the fridge for at least 30 minutes to soak up all that flavor.

For my bagel, I layered on dill, red onion, and capers—then topped it off with a drizzle of the vinaigrette. Seriously, this was the best bagel. I hope you give it a try!
